Today was a healthy day...minus my addiction to sour gummy worms, which in my world are healthy because there are no fat in them, just mounds of sugar. Anyway, I finally got around to creating a recipe for High Protein Chocolate Chip Banana Muffins that came out quite delicious! I will post that recipe tomorrow, I highly recommend you give them a shot...they are filling as well as full of energy boosting protein. Tonight, I made an adjusted recipe from a fellow blogger called Four Corners Lentil Soup. Lentils are great for lowering cholesterol and keeping your blood sugar in check. They are also iron boosters which helps when you aren't a big red meat eater. In addition ladies, they help protect the ta-ta's, it has been proven that eating lentils once a week can help reduce your risk of developing breast cancer by 25%...so try them out! Here is how I prepared tonight's dinner... Start by chopping one half of a fresh yellow onion, peeled ginger (one 2 inch size piece) and fresh garlic...about 2 cloves. Saute in 2 tablespoons of olive oil.
Once the onions become soft, add your seasonings, salt, cayenne and ground cumin.
Transfer all ingredients into a large soup pot and add 3 cups of mixed lentils, 4 cups of chicken stock and one can of fire roasted tomatoes.
Let the soup cook on high for approximately 30 minutes or until the lentils are soft.
Here's the fun part! (Oh yes, it's the little things that get me excited!) My mom gave me an immersion blender for Christmas and I have been dying to try it out, but wasn't sure what to make first. Well I decided tonight that the soup needed to be more creamy so I blended the whole pot and it came out completely perfect...and DELICIOUS!
