Tonights post is going to be pretty boring.  I apologize in advance, there is only so much that one can do with Black Eyed Peas...dinner wise anyways.  Personally I LOVE Black Eyed Pea Salsa, better known as Texas Caviar and I have even seen a few recipes for Black Eyed Pea Patties that looked pretty awesome too, however those aren't "dinner" food and I needed to clear out last nights massive amount of leftovers!  So tonight I made a Dirty Rice type Hoppin' John which basically consists of all of last nights ingredients for the New Years Day black eyed peas mixed with ground beef and rice.  Like I said, not really exciting, but definitely pretty tasty!  Served with a nice green salad it made a quick and easy dinner and the best part I have refrigerator space back!

Start by browning ground beef in a large skillet, I always use the leanest meat I can find and add a little extra virgin olive oil to saute with.

Black Eyed Peas left over from last nights meal...mmm don't they look good? ;) The easy part is all of the spices, tomatoes and onion are already mixed in!

And this is the final product...not the prettiest dish but it was tasty!
Well, now that we have gotten New Years out of the way I am excited to really start posting some fantastic recipes! I promise that you DO NOT want to miss tomorrow...it will be something that no one can turn down and all of my local friends and family will definitely get to experience (taste) firsthand because there is NO way I can keep it in my house!  I love to cook, but I never really eat much...that's your job!!!
